What says summer to you most? Ice-cream? BBQs? Strawberries and cream?…and hopefully salads! Summers are a great time to have big, green salads as we are blessed with an abundance of seasonal produce in the summer months. Consuming mixed salads are a wise way to get a variety of nutrients in one bowl and in one sitting.
This salad is ideal for light summer lunches and even taste great as a dinner side. No more sad, wilted greens present here. This salad is crunchy, delicious and filled with a rainbow of colour. Plus, you’re getting a hearty dose of fibre and protein to keep you sustained.
This summer salad has a garden-fresh blend of crisp romaine lettuce, spinach, an added crunch with red onions. Theres also the sweet combination of strawberries and mangoes and the fragrant herb parsley. I dressed the salad with a typical summer dressing, vinaigrette. But there are so many summer ingredients you can experiment with.
