A “lighter fry up” you ask? Surely this is impossible?
The great thing about this “fry up” is that it is quick to make, has 5 portions of vegetables in it and will fill you up till lunchtime. It can be prepped in just one pan also. So all you have to do is place all ingredients on the pan, prop it on the stove, in a matter of time, a delicious breakfast awaits. It is literally from fridge to plate in under 20 minutes.
A typical cafe style fry-up is approximately 800 calories (nearly 1/2 of a woman’s calorie intake), 63g fat, 18g saturated fat and 4.52g of salt. Something not to be indulged in regularly…
Today’s recipe has almost half the fat, more fibre, less salt and a good dose of Vitamin A and C.
Breakfast is such an important meal of the day. Did you know?..In the UK approximately 1 in 5 people skip breakfast daily. Mainly due to not feeling hungry first thing in the morning, not having enough time to eat or calorie-counting. But we all need to eat breakfast. This is to break our fast after we sleep in the night. The fewer daily meals we have, the less likely we are to have the right balance of nutrients and are more likely to reach for the junk foods.
So go on, make this delicious healthy breakfast tomorrow morning. Or, better yet, for any meal of the day.
- 2 big handfuls of spinach
- 2 Slices whole meal/ rye bread (optional)
- Bunch of vine tomatoes
- 1 Portobello mushroom (sliced)
- 1 small red onion
- 1Tbs of olive oil
- 1/2 avocado sliced
- Salt and pepper to taste
- Pour oil in pan
- Add mushroom, tomatoes, red onion, spinach, salt and pepper
- Cover pot with lid
- Let it steam for 3 minutes
- Transfer to plate and top with avocado
